This year, it really had nothing to do with knowing that I needed to wear a swimsuit. It felt more like a natural transition. Being the modern mom that I am, I started scouring Pinterest for “Healthy Dinner Recipes.” What I was presented with was a whole lot of chicken… While I know that there are one billion ways to cook a chicken breast, one cannot live off chicken alone. So, I put together this list of healthy dinners that are not chicken.
20 Minute Sausage & Zucchini Skillet

This recipe is fast, easy, and delicious! It’s also Whole 30, if that’s your thing. I love a recipe I can just chop, throw together, and done in 20 minutes. She uses chicken sausage, but you can use whatever your favorite happens to be.
Fish Tacos

These fish tacos are our absolute go to on busy weeks! In the spring and summer we have them once a week. Easily customize them to your taste and you’ve got a healthy dinner the whole family will love!
Zucchini Lasagna Boats

My friend made this for us after Emma was born. It is delicious! In fact, once Em started solids, it quickly became one of her favorites as well. We make it with ground turkey and substitute cottage cheese for the ricotta because we’re not big ricotta fans. We prepare this often in the summer because we always have a bumper crop of delicious zucchini from out garden. A delicious, healthy dinner to put in your arsenal!
Power Salad

Okay, okay this recipe was originally made with chicken but you can use whatever protein you’d like. I think it would be delicious with salmon! We love the texture all of the components of this salad lend to the dish. It’s light and flavorful, filling without being heavy.
Keto Meatloaf Stuffed with Goat Cheese and Spinach

Y’all. My husband asks for this meal often. That’s how you know it’s a winner! You’ll have to practice rolling the loaf but it’s delicious even if it looks messy. Add some roasted or grilled seasonal veggies or a salad and you’re good to go!
